Gigantic Breakfast Burrito

Gigantic Breakfast Burrito

I love breakfast any time of the day! Whenever I can make an easy version of a favorite large enough to feed a family at one time…well I’m all over that.  This gigantic breakfast burrito is a perfect breakfast item anytime during the day!

Ingredients

6 large flour tortillas
10 eggs, scrambled
5 bacon strips, cooked, cooled and chopped
1 cup prepared salsa
1 cup shredded cheese
salt and pepper to taste
Spicey Cheese Sauce: 1/2 cup butter
1/2 cup flour
4 cups milk
2 cups prepared salsa
2 cups cheddar cheese, shredded
salt and pepper to taste

Instructions

Preheat your oven to 350 degree’s.

Line a cast iron skillet with large flour tortillas letting them overlap the edge.

Spoon the scrambled eggs, chopped bacon, salsa and cheese into the center of the tortillas. Place one tortilla over the top of the filling and fold the other tortillas over the top. Place a second cast iron skillet on top and place them in the oven for about 30 minutes.

While the gigantic breakfast burrito is cooking make the cheese sauce.

To make the cheese sauce, melt the butter in a large saute pan. Add the flour and mix together.

Pour the milk into the roux and whisk to combine. Add the prepared salsa and cheddar cheese. While stirring, bring to a boil to thicken. Reduce the heat to a simmer and continue cooking for about 5 minutes.

Remove the gigantic breakfast burrito from the oven and pour the cheese sauce over the burrito.

Slice like you would a pie, serve and enjoy!
