Cream Soups

Creamy Fall Soups

When the weather cools off here in the western part of the United States, I love to start make warm and creamy soups. Potato soup and cheesy broccoli soup are two of my favorites. Mom would make these soups and many others when I was growing up. Sitting down to homemade soups are a treat everyone should enjoy!

Ingredients

Potato Cream Soup
4 tbsp butter
1 medium size onion, sliced
1 tsp garlic
1/4 cup flour
6-8 cups milk
1 tbsp chicken bullion
4 potatoes, cooked, cut into 1/2 inch cubes
3 cups shredded cheddar cheese
Cheese and Broccoli Soup
4 tbsp butter
1 medium size onion, sliced
1 tsp garlic
3 cups chopped broccoli
1 cup chopped celery
1/4 cup flour
6-8 cups milk
1 tbsp chicken bullion
3 cups shredded cheddar cheese

Instructions

To make the potato cream soup: Heat a large pan on the stove and add the butter, sliced onions and garlic. Saute until fragrant (about 3 minutes).

Sprinkle the sautéed onions with flour and stir to incorporate the butter and flour together.

Add the milk while gently stirring along with the chicken bullion.

Gently fold in the prepared potatoes, and bring the soup to a boil while gently boiling. Reduce the heat to a simmer and add the cheese. Stir in the cheese and gently stir until the cheese is melted.

I like to serve this soup in a bread bowl. Enjoy!
