
Columbian Cheese Bread
This cheese bread can either be fried or baked. I choose to bake these but have fried them as well. You can also substitute shredded parmesan cheese for the other cheeses to create Brazilian cheese bread with this same recipe.

Ingredients
3/4 cups cornstarch
1/2 cup tapioca starch (plus more as needed)
1/2 tsp baking powder
2 tbsp sugar
pinch of salt
2 eggs
1 tbsp milk
1 cup finely crumbled feta cheese
1/2 cup queso fresco

Preheat oven to 350 degrees.

In one bowl combine the cornstarch, tapioca starch, baking powder, sugar and salt. Whisk everything together to combine.

In a separate bowl, combine the eggs, milk, feat cheese and queso fresco mixing everything together to combine.

Add the wet ingredients into the dry ingredients and mix together to combine. At this point you need to adjust the tapioca starch amount to create a soft dough.

Divide the dough into 6-8 round balls and place them on a parchment lined baking sheet and bake for approximately 20 minutes or until fully cooked through and golden brown.

Remove from the oven, cool, serve and enjoy!

Variation: If you would like to make Brazilian cheese bread, substitute the both cheeses in this recipe with 1 1/2 cups shredded parmesan cheese.
