Chicken Tortelli Soup

Chicken Tortellini Soup

I love making this in my pressure cooker or Instant Pot because it is so fast and easy to put together! Instead of regular bread or rolls I love serving this soup with cinnamon rolls.

Ingredients

6-8 cups chicken stock
1 onions, chopped
5 carrots, sliced
5 celery stalks, sliced
2 cups chopped kale
3 cups frozen green beans
4 cups of chicken tortellini
5-6 sprigs of fresh thyme

Instructions

Add the chicken stock to the your pot along with the chopped onion, carrots, celery, kale and green beans.

If using your Instant Pot, pressure cook on high for 3 minutes. Release the pressure and add the prepared chicken tortellini and fresh thyme sprigs.

Place the lid back on the Instant Pot and pressure cook on high for an additional 2-3 minutes. Release the pressure and remove the lid. Double check to make sure everything is cooked. If not, simply simmer for an additional 5 minutes to finish cooking the vegetables (if needed).

If making the soup on the stove top add the chicken stock along with all of the chopped vegetables and simmer for about 30 minutes. Add the chicken tortellini and fresh thyme. Simmer for about 8 minutes to cook the tortellini pasta.

Serve with your favorite bread and enjoy! I actually like to serve this soup with cinnamon rolls.
