Chicken Parmesan with Pasta
Fresh, delicious and so very Italian…need I say more? This chicken parmesan will knock you socks off! Serve with your favorite pasta and enjoy!
Ingredients
2 chicken breasts
1 small onion, chopped
4-6 garlic cloves, smashed
1 can crushed tomatoes, 28 oz
1 can diced tomatoes, 28 oz
3 eggs
4 cups Italian seasoned bread crumbs
8 slices mozzarella cheese
1 1/2 cups shredded parmesan cheese
1/3 cups dried or freshly chopped parsley
Olive oil
Salt and pepper to taste
Instructions

Preheat your oven to 350 degree’s.

Butterfly each chicken breast in two equal halves. Flatten each piece of chicken so each piece is the same width.

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pan. Add the chopped onion and smashed garlic cloves. Saute for about 3 minutes or until very fragrant. Add the crushed and diced tomatoes, stirring to combine everything together. Salt and pepper to taste. Bring the tomatoes to a boil, reduce the heat and simmer for about 20 minutes.

Lay the chicken breasts onto a baking sheet and sprinkle each piece with salt and pepper.

Heat a large sauté pan on the stove and add about 1 inch of oil in the pan.

In a large bowl, add the eggs and whisk together. Add the Italian seasoned bread crumbs to a large re-sealable plastic bag.

Dip the four chicken pieces in the eggs and then place them in the bread crumbs, shaking the bag to evenly coat the chicken breasts with bread crumbs.

Pan fry each prepared chicken breast for about two minutes on each side or until they are golden brown. Remove and place on a large plate lined with paper towels, set aside.

Spray a 9x13 baking pan with vegetable spray. Once the tomato sauce has simmered for 20 minutes, ladle about 2 cups of the tomato sauce into the baking dish, spreading it evenly around the pan. Sprinkle half of the parmesan cheese over the tomato sauce.

Place the pan fried chicken breasts on top of the tomato sauce mixture. Ladle about 1/2 cup of the sauce on top of each chicken breasts and evenly divide the mozzarella cheese slices amongst them. Ladle a little tomato sauce over the cheese and finish with a sprinkling of dried or fresh parsley and the remaining shredded parmesan cheese.

Place the chicken parmesan into the oven and bake for approximately 30 minutes or until the chicken is fully cooked and the cheese has melted.

While the chicken parmesan is baking, cook some spaghetti as directed by the package directions.

Serve the freshly baked chicken parmesan over spaghetti with some of the tomato sauce on the side for the spaghetti. Enjoy!
