Cheesy Chicken Strips

Cheesy Chicken Strips

Here’s a wonderful idea for a tasty lunch or dinner. By dredging the chicken strips in “Cheese It” crackers you get a cheesy, crispy and very dip-able chicken strip! Kids and adults with love this recipe.

Ingredients

3 chicken breasts, thawed
2 cups butter milk
1 pkg ranch dressing mix (approx 2 1/2 tbsp)
4 cups crushed “Cheese It” crackers.
1 head broccoli
1 head cauliflower
2 cups peeled baby carrots
1 cup prepared ranch dressing

Instructions

Cut each chicken breast into 4 strips, placing them in a large bowl.

Pour the buttermilk over the chicken strips and sprinkle with the ranch dressing mix. Using a large spoon mix everything together and marinade the chicken strips for 1 hour.

Remove the florets from the broccoli and cauliflower, washing and setting them aside. The stems can be used for soups and stocks.

Preheat your oven to 400 degree’s.

Once the chicken has marinaded, using tongs, remove each chicken strip and dredge in the crushed “Cheese It” crackers.

Place a cooling rack into a baking sheet and place the prepared chicken strips onto the prepared baking sheet.

Place the chicken strips into the oven and bake for 20-30 minutes or until the chicken strips are fully cooked. Internal temperature should be 165 degree’s.

Serve with fresh broccoli, cauliflower and baby carrots for a wonderful lunch or dinner idea.
