Carne Asada, Blue Cheese and Sourdough Pizza

Carne Asada and Blue Cheese Sour Dough Pizza

Homemade pizza’s are the best. This unique pizza includes many of my favorite flavors on or  off a pizza. I’m excited for you all to try it!

Ingredients

For the Dough: 6 cups bread flour
2 cups sourdough start
2 cups water
1 tbsp salt
For the Pizza Toppings:
2 lbs carne asada or flat steaks
2 - 14.5 oz cans Italian style diced tomatoes
6-8 cups shredded pizza blend cheese (or your choice)
2 cups crumbled blue cheese
5 cups fresh arugula
1/4 cup extra virgin olive oil

Instructions

To make the dough: This does make a lot of dough so feel free to half the recipe. As is, it’s enough dough for about 3 - 18” inch pizza crusts.

Add everything into your mixer bowl. Depending on the size of your mixer, you may need to adjust ingredient amounts to accommodate.

Start kneading the dough and continue kneading for at least 30 minutes or until the gluten is well developed. You will see the dough transform from a solid mass to almost a soupy stringy looking dough that can easily be stretch without tearing. The dough will be sticky.

Transfer the dough to an oiled bowl, cover with plastic wrap and let the dough rest and double in size. This may take several hours, so plan accordingly.

When ready to make the pizza’s, preheat your oven to 450 degree’s. I preheat a pizza stone with the oven.

To make the pizza’s: Divide the pizza dough into three equal balls. Roll each dough ball out to your desired size and shape. I like to dredge the pizza dough in corn meal before I roll it out. Another trick I like to to do is shape the dough right on the pizza peel making it easier to transfer to the oven.

When you have the dough shaped, place it in your preheated oven, directly on the pizza stone and partially bake the crust for about 10-15 minutes or until the top begins to brown.

Remove the partially baked crusts from the oven and continue partially baking the crusts until all the dough is ready for the pizza’s.

While your are preparing the dough, salt and pepper the carne asada and grill for about 2 minutes on each side. Let the meat rest for about 5-10 minutes and slice into slices.

Build the pizza’s by dividing the the diced tomatoes between the prepared crust, top with the crumbled blue cheese, shredded pizza blend cheese and the prepared carne asada.

Place the pizza’s bake in the preheated oven and bake until the cheese has melted and is bubbling.

While the pizza’s are baking, toss the fresh arugula with the olive oil and an little salt and pepper.

When the pizza’s are baked, divide and top them with the fresh arugula, serve and enjoy!
